Christina's Wheat-less & Gluten Free Super Moist Organic Banana Muffins

Ingredients

1/2 C Olive Oil

2 eggs

1/4 C Maple Syrup

3/4 C Apple Sauce

1/2 C Yogurt

4-5 ripe sliced Bananas

2 C of NO WHEAT flour
(1 1/2 C of Brown Rice Flour & 1/2 Quinoa Flour)

1 TBSP Ground Flaxseed (Optional)

1 TSP Baking Soda

3/4 C Walnuts (Optional/For at home eating!)

Olive Oil Spray

Adult Version: 1/2 C Chocolate Chips

Directions
Preheat oven to 350F

Mix dry ingredients in separate bowl & set asside
(Brown Rice Flour, Quinoa Flour, Baking Soda, & Ground Flax Seed)

Mix wet ingredients in large bowl in the following order:

Beat 2 eggs

Add & Mix Maple Syrup & Apple Sauce

Add & Mix Olive Oil

Add & Mix Yogurt

Add & Mix Sliced Bananas (I like to use an electric beater so that the bananas get mushy)

Add dry mix into the wet mix

Optional: Add & Mix Walnuts & Chocolate Chips at this point

Spray Olive Oil in muffin tins. Disperse evenly (Use fingers if needed!)

Cook at 350 for about 45min. -1 hour. Watch for muffins to rise, become golden light brown and begin to pull away from the sides.

Take muffins. Let cool.

After 5 minutes turn upside down and let muffins drop onto a towel.

Eat up with in 3 days! You might want to keep it in the fridge for better preservation!
Nutritional Facts:
More than half the fat in flaxseed is of the essential omega-3 fatty acid type. Scientific studies reporting health benefits for omega-3 fatty acids show that these fatty acids are required for proper infant growth and development. Cholesterol can be reduced by adding flaxseed to the diet. New research also suggests that alpha-linolenic acid, an omega-3 fatty acid which is abundant in flaxseed, offers protective effects against both coronary heart disease and stroke. Omega-3s have been shown to also protect against hypertension, and inflammatory and autoimmune disorders. Long-term studies of flaxseed effects on breast cancer are now underway.

Walnuts are an excellent source of omega-3 essential fatty acids, a special type of protective fat the body cannot manufacture. Walnuts' concentration of omega-3s (a quarter-cup provides 90.8% of the daily value for these essential fats) has many potential health benefits ranging from cardiovascular protection, to the promotion of better cognitive function, to anti-inflammatory benefits helpful in asthma, rheumatoid arthritis, and inflammatory skin diseases such as eczema and psoriasis. In addition, walnuts contain an antioxidant compound called ellagic acid that supports the immune system and appears to have several anticancer properties.

Quinoa has excellent reserves of protein, and unlike other grains, is not missing the amino acid lysine, so the protein is more complete. The World Health Organization has rated the quality of protein in quinoa at least equivalent to that in milk. Quinoa offers more iron than other grains and contains high levels of potassium and riboflavin, as well as other B vitamins: B6, niacin, and thiamin. It is also a good source of magnesium, zinc, copper, and manganese, and has some folate (folic acid).

The beneficial health effects of olive oil are due to both its high content of monounsaturated fatty acids and its high content of antioxidative substances. Studies have shown that olive oil offers protection against heart disease by controlling LDL ("bad") cholesterol levels while raising HDL (the "good" cholesterol) levels. (1-3) No other naturally produced oil has as large an amount of monounsaturated as olive oil -mainly oleic acid.

Olive oil is very well tolerated by the stomach. In fact, olive oil's protective function has a beneficial effect on ulcers and gastritis. Olive oil activates the secretion of bile and pancreatic hormones much more naturally than prescribed drugs. Consequently, it lowers the incidence of gallstone formation.

The vitamins present in pure maple syrup are PP (Niacin), B5 (Pantothenic Acid), B2 (Riboflavin), Folic Acid, B6 (Pyridoxine), Biotin, and Vitamin A. Maple syrup not only contains trace amounts of these vitamin and minerals, but also amino acids which are the building blocks of protein.

The following organic ingredients can be purchased at Rainbow Grocery in the bulk section for a minimal cost: Olive oil, Brown Rice Flour, Oat Flour, Quinoa Flour, Oat Bran, Baking Soda, Walnuts & Chocolate Chips.) I like to purchase my organic applesauce and my organic yogurt at Trader Joes (the price seem to be a little less.)

Ground Flaxseed needs to be sealed in a dark bag and preferably in the refrigerator. It should be consumed within 45 days after opening the bag. After that it should be discarded.
